The "tears" in your Champagne glass


The tears are also called legs or cuisse of the wine.

The myth:
The tears appearing when you turn the wine in your glass are related to the level of glycerol (and then alcohol) in the wine and then related to its quality.

The facts:
The tears have nothing to do with the "glycerol" contained in the wine. The proof is that if you take a glass of (cognac for example) do not contain any glycerol.

The building steps of the tears:
  • the film of the wine is contained on the sides of the glass by a superficial tension which compensates the wine density. The alcohol evaporates at the surface of the wine
  • the lighter fraction of the wine evaporating, the density of the mix raises closer to those of pure water. There is accumulation of this mix in a heavier crown inside the glass.
  • the superficial tension then disappears and the crown goes down on the sides of the glasses giving an impression of tears.
