And so the best premier cru villages on the north-facing slopes of the Montagne between Mailly & Villers-Allerand. The soils change progressively as you travel northwest- there is less pure chalk and sandstone/clay which suits the Meunier very well. In the hands of top grower Gilles Dumangin, in the pretty village of Chigny Les Roses, Meunier can be transformed into the praised Grande Réserve (50 per cent Meunier); it also accounts for all the red wine that is added to colour his succulent rosé. He succesfully achieves finess and fruit rather than substance and vinosity in these Champagnes, which is an intelligent recognition of the strnegh and limitations of his soils. And as something of an Epicure, since 2001Gilles has revived some forgotten Champenois specialities, such as a delicious Champagne confit that matches a delicate foie gras, or the grape chutney that is an ideal condiment for pâtés. Gilles also imaginately use cask aging and traditional solera systems to produce a range of alcohols such as ratafia, marc and fine de Champagne
